Almond Snowball Cookies

  • ⅔ cup (75g) almond flour
  • 1-¼ cup (140g) all purpose flour 
  • ½ cup (1 stick) unsalted butter (softened)
  • ¼ cup (25 g) powdered sugar, plus more for coating
  • ¼ tsp kosher salt
  • 1 tsp Hawaiian Vanilla Extract 


Step 1. Line a rimmed baking sheet with parchment paper and set aside.

Step 2. With an electric mixer, cream the butter with the confectioner’s sugar, salt, and vanilla extract until smooth and creamy. Scrape down the sides of the bowl, then add in the almond flour and all purpose flour. Mix until well combined. 

Step 3. Roll the dough into 1-inch balls and place on the prepared baking sheet. Transfer the baking sheet to the refrigerator for 15 minutes. 

Step 4. While the dough chills, preheat the oven to 325°F.

Step 5. Remove the baking sheet from the refrigerator and bake the cookies for 20-25 minutes until lightly golden brown. Let the cookies cool on the baking sheet for 5 minutes. 

Step 6. Place an additional ¼ cup of powdered sugar in a small bowl. Work in batches and toss the warm cookies in the powdered sugar to lightly coat, then transfer to a wire rack to cool completely. Once cooled, coat the cookies again with the remaining powdered sugar.
