Smoky Bacon Artichoke Dip
We're putting our vanilla twist on this timeless classic—Smoky Bacon Artichoke Dip! By seasoning our Vanilla Coffee Spice Rub on thick-cut bacon, you'll add an unexpected smokiness to this iconic dip! One taste, and you'll be hooked!

Serves: 4-6
Ingredients:
- 2 shallots, chopped
- 2 cloves of garlic, minced
- 1 TBS olive oil
- 1 TBS butter
- 1 TSP vanilla extract
- 6 pieces of thick-cut bacon
- 3-4 TBS vanilla coffee spice rub
- 1/2 can (14 oz) of artichokes, chopped
- 1 (8 oz) pack of frozen spinach, thawed and drained
- 1 (8 oz) pack of cream cheese, softened
- 1 cup shredded Italian 5-cheese blend
- 1/2 cup sour cream
Instructions:
Step 1: Preheat your oven to 350 degrees Fahrenheit (175°C).
Step 2: Chop the shallots and add them to the olive oil in a skillet over medium heat. Cook for about 3-5 minutes until the shallots are translucent. Then, add the minced garlic and butter, cooking for another minute. Remove from heat, stir in the vanilla extract, and set aside.
Step 3: Take the bacon slices and generously rub the vanilla coffee spice rub on both sides in a separate skillet set to medium-high heat. Cook the bacon on each side for 2-3 minutes or until crispy. Once cooked, remove from heat and place the bacon on a clean paper towel to drain excess grease, then chop the bacon into bite-sized pieces.
Step 4: Combine all the prepared ingredients in a mixing bowl, reserving half of the cheese and bacon. Transfer the mixture to an oven-safe 8x8 dish and top with the reserved bacon and cheese. Bake in the oven for 25-30 minutes or until hot and bubbly.
Step 5: Serve warm with chips or toasted baguettes, and enjoy!
