Vanilla Strawberry-Citrus Scones

These Vanilla Strawberry-Citrus Scones are both equally delightful and perfect for breakfast, brunch, or dessert! Pair it with a cup of tea or coffee, and you’re ready for a peaceful treat!

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup whole wheat flour
  • 4 tbsp sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup cold or frozen unsalted butter
  • 1 cup chopped fresh strawberries
  • 1 large egg
  • 1/2 cup buttermilk
  • 1 tbsp milk
  • 1 tbsp turbinado sugar
  • 1 tbsp vanilla extract
  • 1/2 tbsp orange zest

 

Scone Glaze:

  • 4 tbsp powdered sugar
  • 1 tbsp maple syrup
  • 1 tbsp milk
  • 1/2 tsp vanilla extract
  • 1/2 tsp orange zest

 

Instructions:

1. In a small bowl, combine the buttermilk, half of the fresh orange zest, the egg, and the vanilla extract. Mix well, then refrigerate to keep cool.
   
2. Wash and chop the strawberries into small pieces.
 
3. In a separate bowl, mix the all-purpose flour, whole wheat flour, white sugar, and baking powder.

4. Take the frozen butter and grate it into the bowl of dry ingredients using a cheese grater. Use a pastry cutter to incorporate the butter into the flour until the mixture resembles sand.

5. Gently mix in the buttermilk mixture until just combined. Then, fold in the chopped strawberries, being careful not to over mix as it may become too wet.

6. Turn the dough out onto a lightly floured surface and shape it into a disk. Cut the disk into 8 triangular pieces and place them on a parchment-covered baking sheet.

7. Freeze the scones for about 15-30 minutes while you preheat your oven to 400°F (200°C).

8. Once the oven is ready and the scones are cold, remove them from the freezer. Lightly brush each scone with milk and sprinkle turbinado sugar on top.

9. Place the scones in the oven. While they are baking, prepare the glaze by mixing the maple syrup, powdered sugar, milk, the remaining orange zest, and vanilla extract in a small bowl. Whisk until smooth.

10. Bake the scones until they are golden brown and firm to the touch. This will take about 20-25 minutes.

11. Let the scones cool for 5 minutes, drizzle the glaze on them, and enjoy!
