Vanilla Mousse


  • 8.8oz Heavy Whipping Cream (to whip)
  • 3.6oz Heavy Whipping Cream (to heat) 
  • 6oz White Chocolate
  • 1 Vanilla Bean


Peach Compote


  • 4 Peaches
  • 4 Tbsp Sugar
  • 1 Vanilla Bean


Sponge Cake

  • 3.5 oz Egg Whites 
  • 3 oz Sugar
  • 2.5 oz Almond Flour
  • 1 oz Wheat Flour
  • 1 Tbsp Vanilla Mousse
