Ingredients:
- Whole dates, 12
- Almond Butter, about a 1/2 cup. For this recipe, the solid, unblended almond butter at the center of a fresh jar is best. (For a nut-free version, use about 1/3 cup feta cheese)
- Thin bacon strips 6 slices cut in half
- Hawaiian Vanilla Maple Syrup
Process:
Step 1: Preheat oven to 350° F.
Step 2: Slice dates so they lie open, remove pit. Using a small spoon, fill dates with almond butter (or feta) until inside is full but date can still close around it, about 1-2 teaspoons.
Step 3: Wrap filled date with half a slice of bacon (you can hold the bacon in place by pinning it with a toothpick, if you like).
Step 4: Place on rack over tin-foiled pan, put in oven, let bake for 12-15 min, turning halfway through, until bacon is beginning to golden.
Step 5: Pull out the pan and brush the dates with Vanilla Maple Syrup, then return pan to oven for a final 5-7 min, or until bacon is golden and crispy.
Allow dates to cool for 15 min or more before eating, as the insides get very hot! Enjoy!
